- 1 cup (240 ml) warm milk (about 100–110°F / 38–43°C), or unsweetened dairy-free milk
- 2 tablespoons melted butter or neutral oil
- 1 large egg, room temperature
- 1 teaspoon apple cider vinegar
For Boiling
- 2 quarts (2 liters) water
- 1 tablespoon honey or brown sugar
- 1 teaspoon baking soda

Egg Wash
- 1 egg, beaten

Instructions
Step 1: Make the Dough
- In a large bowl, whisk together the gluten-free flour, yeast, sugar, salt, and baking powder.
- Add the warm milk, melted butter, egg, and apple cider vinegar.
- Mix until a thick, sticky dough forms.
- Knead gently with a spatula or stand mixer for about 5 minutes. Gluten-free dough will be softer than traditional bagel dough.
Step 2: First Rise
- Cover the bowl with a clean towel or plastic wrap.
- Let the dough rise in a warm place for 45–60 minutes, until puffy.
Step 3: Shape the Bagels
- Lightly wet or oil your hands.
- Divide the dough into 6 equal portions.
- Roll each portion into a smooth ball.
- Poke a hole through the center and gently stretch it to form a bagel shape.
- Place the bagels on a parchment-lined baking tray.
Step 4: Boil the Bagels
- Preheat the oven to 425°F (220°C).
- Bring the water to a gentle boil.
- Stir in the honey (or brown sugar) and baking soda.
- Boil each bagel for 30–45 seconds per side.

- Use a quality gluten-free flour blend that already contains xanthan gum. If yours doesn’t, add 1 teaspoon xanthan gum.
- The dough should be sticky but workable—avoid adding too much extra flour.

- Allow the bagels to cool completely before slicing so the crumb can set.
